Thinly slice the beef against the grain. Slice the bell peppers and onion. Mince the garlic and ginger.
Cook the Beef:
Heat 1 tbsp vegetable oil in a large skillet or wok over high heat. Add the sliced beef in a single layer and cook until browned and cooked through, about 2-3 minutes per side. Remove the beef from the skillet and set aside.
Stir-Fry the Vegetables:
In the same skillet, add the remaining 1 tbsp vegetable oil. Add the sliced onions and bell peppers. Stir-fry for 3-4 minutes until they start to soften.
Add the minced garlic and ginger, and cook for an additional 1 minute.
Add the Sauces:
Return the beef to the skillet. Stir in the soy sauce, oyster sauce, and hoisin sauce. Mix well.
Pour in the beef broth and bring to a simmer.
Thicken the Sauce:
Stir in the cornstarch mixture and cook for 1-2 minutes, or until the sauce has thickened.
Finish and Serve:
