Dice the onion.
Wash the red bell pepper, remove the stems and seeds, and cut it into chunks.
Heat oil in a pan over medium heat.
Add the diced onion and sauté for 3-4 minutes.
Add the chopped red pepper to the pan and stir well.
Sauté for another 5-7 minutes, then remove from heat.
Step 3: Make the Potato Mixture
Drain the water from the grated potatoes and squeeze out any excess water using your hands.
Transfer the potatoes to a bowl.
Add the eggs, salt, black pepper, nutmeg, and marjoram to the bowl with the potatoes.
Mix thoroughly.
Step 4: Assemble and Bake
Preheat your oven to 180°C (350°F).
Lightly grease a baking dish.
Spread the potato mixture evenly in the baking dish.
Spoon the onion and pepper mixture evenly over the potatoes.
Optionally, grate cheese over the top of the dish.
Bake in the preheated oven for 50 minutes, or until the potatoes are cooked through and the top is golden brown.
