My Texas friend showed me this breakfast recipe, and I’ve been hooked since!

Today, I’ve got just the thing: Tex Mex Migas! This dish is a traditional Mexican breakfast that’s been Tex-ified with the addition of crispy tortilla strips. It’s basically a fiesta on a plate and a fantastic way to kickstart your day.

Migas, which means “crumbs” in Spanish, originated as a way to use up leftovers – because, let’s face it, no one likes to waste food, especially not delicious tortillas! And the great thing about this dish is its versatility – you can adapt it to whatever you’ve got lying around in the fridge.

Tex Mex Migas

Ingredients

6 large eggs
1/4 cup milk
Salt and pepper, to taste
1 tablespoon olive oil
1/2 onion, diced
1 bell pepper (any color), diced
1 jalapeño, seeded and minced (optional)
3 corn tortillas, cut into strips
1/2 cup shredded cheese (cheddar or Monterey Jack works great)
1/2 cup fresh cilantro, chopped (optional)
Salsa, for serving
