Instructions:
1. Heat the oil in a large pan over medium heat. Add the diced onion, bell pepper, and mushrooms. Cook until tender, about 7-10 minutes.

2. Add the chopped garlic and cook until fragrant, about 1 minute. Remove from heat and set aside.

3. In a large mixing bowl, combine the ground beef, salt, pepper, optional cheese whiz, Worcestershire sauce, ketchup, eggs, breadcrumbs, and the cooked mixture of onions, peppers, mushrooms, and garlic.

4. Place half of the meat mixture into a loaf pan, spreading it evenly. Place the diced provolone cheese in the center, then cover with the remaining meat mixture, ensuring the edges are sealed well.

5. Shape the meatloaf into your desired shape and place it on a baking sheet.

6. Bake in a preheated 350°F (180°C) oven for 50-60 minutes, or until cooked through.

7. Remove the meatloaf from the oven and place the slices of provolone cheese over the top. Return to the oven and broil for 2-4 minutes, or until the cheese is melted and bubbly.

8. Let the meatloaf cool slightly before slicing and serving.
