4 beef steaks (ribeye, sirloin, or filet mignon)
1 tablespoon crushed black peppercorns
Salt to taste
2 tablespoons olive oil
2 tablespoons butter
For the Creamy Sauce:

1 tablespoon crushed black peppercorns (adjust to taste)
1 tablespoon butter
1 small shallot, finely chopped
2 cloves garlic, minced
1/2 cup beef broth
1/2 cup heavy cream
1/4 cup sour cream or crème fraîche (optional)
Salt to taste
Fresh parsley for garnish
