Ingredients
2 ripe bananas
2 large eggs
1/2 cup of oat flour (can be made by blending oats)

Directions
Mash the bananas in a medium-sized mixing bowl using a fork until they’re relatively smooth.
Crack the eggs into the bowl with the mashed bananas and whisk together until well combined.
Stir in the oat flour until the mixture forms a smooth batter.
Heat a non-stick skillet over medium heat and lightly grease it with butter or oil.
Pour small amounts of the batter onto the hot skillet (about 1/4 cup per pancake) and cook for 1-2 minutes on each side or until pancakes are golden brown and cooked through.

Serve warm with your choice of toppings.
