Heat the Pan: Place a large skillet over medium-high heat and add the olive oil.
Cook the Meat: Toss in the ground pork, minced ginger, and garlic. Crumble the pork as it cooks until it’s fully cooked. Drain any excess liquid, if needed.
Season: Sprinkle cornstarch and Chinese five-spice powder over the cooked pork. Give it a good stir to evenly coat the meat.
Sauce It Up: Pour in the soy sauce, sesame oil, and chili paste. Stir and cook for about 2 minutes until a sauce forms.
Add Veggies: Introduce the coleslaw mix to the skillet. Toss everything together and cover with a lid for 2-3 minutes.
Final Touch: Once the coleslaw turns bright green and slightly wilted, taste and season with kosher salt, if necessary.
Serve: Dish it out over cooked rice. Garnish with sliced green onions and wonton strips, if you like.
