You guys, I have to tell you about this mind-blowing stir fry I made the other night – it was seriously the best thing ever! I was craving egg rolls but didn’t feel like wrapping all the filling individually.

That’s when I remembered seeing this “egg roll in a bowl” recipe online.

I gathered up the ingredients – ground pork, cabbage, ginger, garlic, soy sauce…all the classic egg roll flavors.

Threw it all in a skillet and within 20 minutes, bam! I had the most amazing egg roll experience without any work.

It was like all my favorite parts of an egg roll – the savory meat and crisp veg – but served in a big cozy bowl.

The ginger and garlic really shine through, giving it that authentic Chinese takeout taste.

Pro tip: a splash of sesame oil adds an extra layer of umami.

I served it over rice so it was like the ultimate egg roll bibimbap.

So insanely satisfying! The best part was having leftovers for lunch the next day.

I just reheated it in the microwave and it was still delicious.

Totally gonna be making this one again, especially on busy weeknights.

It’s cheap, easy and extremely comforting. Don’t even get me started on the crispy wonton strips on top – total game changer.

1 tbsp olive oil
1 lb ground pork
2-inch fresh ginger, minced
4 garlic cloves, minced
1 tsp cornstarch
1/2 tsp Chinese five-spice powder
1/4 cup low-sodium soy sauce
2 tsp sesame oil
2 tbsp chili paste
16 oz coleslaw mix (preferably with thinly sliced carrots)
Kosher salt, to taste (if needed)
Cooked rice
Thinly sliced green onions
Wonton strips
