Slow Cooker No Peek Chicken & Rice
Servings: 6

Ingredients
1 cup minute rice (uncooked)
1 1/2 lbs boneless, skinless chicken breasts
1 can (10.5 oz) cream of chicken soup
1 can (10.5 oz) cream of mushroom soup
1 cup chicken broth
1 packet onion soup mix
Salt and pepper to taste
Optional: 1 cup frozen peas or carrots

Spray the inside of your slow cooker with non-stick cooking spray.
Spread the minute rice evenly over the bottom of the slow cooker.
Place the chicken breasts on top of the rice.
In a mixing bowl, combine the cream of chicken soup, cream of mushroom soup, and chicken broth. Mix until smooth.
Pour the soup mixture over the chicken and rice, making sure everything is covered.
Sprinkle the onion soup mix evenly over the top.
Cover the slow cooker with the lid and cook on low for 6-7 hours, or until the chicken is cooked through and tender.
If using, add the frozen peas or carrots about 30 minutes before serving.
Season with salt and pepper to taste before serving.

Variations & Tips
For a different flavor profile, you can use cream of celery soup in place of one of the other soups. You can also add a can of drained mushrooms or a few chopped green onions for added texture and flavor. If you like a bit more spice, a dash of paprika and a hint of garlic powder can give the dish an extra kick. For a healthier twist, try using brown minute rice, but be aware it may need a slightly longer cooking time.
