Instructions
1. Make the Cream:

In a pot, mix the egg, a pinch of salt, 8g vanilla sugar, and 60g sugar.
Add the cornstarch and milk, stirring until there are no lumps.
Cook over medium heat, stirring constantly, until the mixture thickens.
Remove from heat and stir in the lemon juice and butter until well combined.
Cover the surface with plastic wrap to prevent a skin from forming and let it cool completely.
2. Prepare the Cake Mixture:

Preheat your oven to 180°C (356°F).
Line a 24cm (9.5-inch) baking pan with parchment paper.
In a large bowl, whisk together the eggs with a pinch of salt.
Add 8g vanilla sugar and 120g sugar, mixing until the mixture is light and fluffy.
Gradually add the vegetable oil and warm milk, mixing well after each addition.
Fold in the flour and baking powder until the mixture is smooth.
Gently stir in the chopped apples and raisins.
3. Assemble and Bake:

Pour half of the batter into the prepared pan.
Spread the cooled cream evenly over the batter.
Pour the remaining batter over the cream, smoothing the surface.
Arrange the thin apple slices on top.
For the egg wash, mix the egg yolk with 2 tablespoons of milk. Brush this mixture over the apple slices.
4. Bake:

Bake in the preheated oven for about 45 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cake to cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
5. Serve:

Dust with powdered sugar before serving, if desired.
